2 T. olive oil
2 red bell peppers, chopped
1 onion, chopped
4 cloves garlic, minced
2 tsp. chili powder
1 16 oz. can diced tomatoes

A holiday favorite that I hadn’t made in years … so delicious! Enjoy!
One-A-Day
1# of dates, chopped fine
1 c. walnuts, chopped
1 1/2 c. chunky peanut butter
2 c. powdered sugar
6 T. butter, softened
Mix above well. Roll into 1″ balls. Place in refrigerator for 2+ hours.

A recipe so simple, nourishing, flavorful … and often requested … enjoy!
Hummus
2 cans of garbanzo beans, drained
12 cloves of garlic
Juice from 3 lemons
3/4 c. tahini (health food store)
1 bunch of cilantro, chopped
1 bunch of green onions, chopped
1 1/2 t. salt
2 tsp. cumin
Lots of black pepper and cayenne to taste
